Super Bowl Guacamole

Super Bowl means yummy food!

I am making our favorite guacamole! It’s a bit different but so delicious! I use pomegranate seeds in mine. I know it sounds a bit strange but it’s so good! I got this recipe from a friend.

First Off You Have To “Tackle” the Pomegranate. I cut the pomegranate in half and then place it in a strainer.

I remove all the seeds gently using a fork.

When all the seeds are out. Submerge the seeds in water. The seeds will sink to the bottom and the white stuff (pulp) will float. Take a slotted spoon and remove the white stuff.

Halve 4 avocados, remove the pit. Scoop the avocado out with a spoon and place in a bowl. Mash the avocado. We like it chunky. Add the pomegranate seeds and mix.

I love my little food processor for chopping the onions, peppers and salt all together.

Add this mixture to the avocado and pomegranate mixture. Stir all together. Add your lime juice and chill your guacamole until it’s game time!

ENJOY!

Recipe:

1/3 cup of onion

2 Serrano Chiles (with or without seeds) depends on your taste.

1tsp. of coarse salt

4 lg. Avocados 🥑

2-4 T of lime juice

The seeds of one pomegranate

4 T cilantro (I omit as some do not like)

In food processor grind onion, chiles, salt and cilantro into a coarse paste. Add paste to peeled, cored and mashed avocados and pomegranate mixture. Stir in lime juice.

  1. We had some store guacamole, and I was quite happy, Nance, so this looks quite fantastic. Karen’s homemade touch for the game was a crock pot full of delicious minestrone. Perfect on s winter’s night.
