And this salad has a lovely Orange Juice Balsamic Vinaigrette.

I was inspired by Mary’s Asparagus Strawberry Salad with Orange Balsamic Vinaigrette from Home is Where the Boat Is. I changed things up a bit as I didn’t have Asparagus or pecans.

First I made the vinaigrette. I used her recipe but left out the Dijon mustard, I used honey not sugar and did not add salt or pepper.

Orange Balsamic Vinaigrette

1/4 cup Olive Oil

1/4 cup Orange Juice

2 T white balsamic vinegar

2 t honey

Shake until we’ll combined.

Assembling the Spinach Salad ingredients came next.

I placed fresh spinach on the salad plate. I cut the strawberries and before placing them on the Spinach I soaked them in some of the vinaigrette. Next I peeled a fresh mandarin orange for the salad and placed the segments on the spinach. I did not have pecans so I used Walnut pieces and I did not coat the walnuts in cinnamon sugar… they were just plain. I had a few blueberries and placed them on the salad as well. (Blueberries are optional.) After a few minutes, the Strawberries were ready and I placed them on the Spinach.

When I served the Salad I then dressed it with the delicious Orange Balsamic Vinaigrette. It was a wonderful accompaniment to our grilled chicken.
