I say it every time, donโ€™t I? Where did the week go? Tuesday has come around again! But Iโ€™m happy because that means you are here. So hereโ€™s to Tuesday!

Strawberry Rhubarb Pie

I mentioned that Sweet Man needed to harvest his Rhubarb a few weeks back. Well, he did, and it was a beautiful crop.


Strawberry Rhubarb Pie was made! It came out lovely and delicious!


Do you like Rhubarb? I never had it growing up. My Mom must not have liked it because she never made anything with it. I had no idea I enjoyed it until I met Sweet Man. He likes it so much that he planted it in our backyard. He was delighted when we had it after dinner the other night.

Delicious!

There are many recipes on Pinterest for Strawberry Rhubarb pie. I changed things by adding two teaspoons of vanilla to the rhubarb and strawberry mixture and cutting down on the sugar. I used a half cup of sugar and a 1/3 cup of brown sugar. The brown sugar adds more flavor. Corn Starch helps keep it from being runny. Another tip is to use a slotted spoon when putting the strawberry-rhubarb mixture into the pie.


Here is my pie crust recipe. Itโ€™s easier to work with, and the crust comes out flaky. This recipe came from a friendโ€™s Mom. Crisco is the secret!

Lunch With A Friend

It was wonderful to catch up with a friend at a local cafe. This cafe is new, and their Dirty Chai Latte and Avacado Toast were perfect. I enjoy trying new places especially with a dear friend.

As soon as these garden clogs arrived, I was a happy girl! It is wet here every morning due to overnight rain or morning dew. I love them! Why did I wait so long? Last week, I read that Terri had gotten a pair, and I told her I was ordering some.
