Delicious Pork Chops with Roasted Butternut Squash

This is how my Mom made pork chops. 😊

Season your Pork Chops with salt, pepper, onion powder and garlic powder on both sides. Set aside.

Dice an onion and sauté it in a large pan. After they just start to brown, add your pork chops. Brown them on both sides.

Here is a video of them browning… this will get you hungry!

When chops are done browning… cover the pork chops with beef broth. Bring everything up to a boil. Then cover with a lid and turn the stove down to a simmer. Simmer for two hours.

While waiting on the Pork Chops you can peel and cut up a butternut squash. However… I found that our grocery store already did the hard work for me. I purchased it cut, peeled and ready to go.

Add parchment paper to a sheet pan then add your butternut squash. Season with salt and pepper and drizzle with olive oil and toss. Make sure they are spread out evenly. Put the Butternut Squash into a 400 degree oven. After about 15 minutes turn the butternut squash over and put back in the oven to brown up for about another 15-20 minutes.

When the squash is done plate up your squash with your pork chops. And how about adding some corn on the cob and baked zucchini. I drizzled my butternut squash with real Pennsylvania Maple Syrup.

Pork Chops Ingredients:

1 onion diced

Seasonings to Taste: Onion Powder, Garlic Powder, Salt and Pepper

3-4 pork chops

2-3 cups of beef broth
