Curry Chicken Salad

A refreshing twist on Chicken Salad… Adding just a little Curry adds color and a lovely taste!

Perfect for sitting out on the patio for lunch or dinner!

Here I dine al fresco and by myself. Sweet Man was golfing so I decided to listen to the birds sing while I enjoyed this refreshing salad for lunch.

I added apples and cashews as well. Delightful additions.

The Depression Glass plate was a lovely find from a local antique store.

And how do you like my wine charm? It’s made by my friend who tumbles the rocks (which polishes them.) Then she adds a small hole to the Rock so it can be added, with the Rock beads, to the ring.

She and her husband also make the fabulous napkin rings. Aren’t they pretty? They are made from the cactus skeleton of the Cholla Cactus. (Most cactus skeletons are wood.) Creative Friends!

Here’s how I made the chicken salad. You can always add a little more Mayo for a more creamy salad and more or less curry. I went light with mine.

  2. Every thing looks so inviting. I am not a huge curry fan so might really go light…I like the idea of apples cause I always add grapes to my chicken salad. All of the extra touches with the wine charm, depression plate and napkin rings just adds a beautiful “Nancyism” charm..Love you.
