Here we are starting a New Year… 2022 has arrived! Are you ready?

I do want to thank you for stopping over to this little spot in the Blogging World. I’m so appreciative of this wonderful community of friends supporting each other. It’s a fun place to be! Here’s to a fabulous 2022!

Have You Taken Down Christmas?

I am still hanging on to a little bit of Christmas. I am hosting a Book Club meeting this week so I am keeping some of the Christmas Cheer around. We did travel during the Holidays and I guess I need to see it a bit more.

Book Club Choice

This past month we read The Lost Apothecary. A great book… a day of Mudlarking was the reason the author wrote this fictional story. It was a great read. I am looking forward to our discussion on this interesting book. Have you ever heard of Mudlarking? I never heard of it until this book but it’s quite popular. It’s a type of scavenging… that’s all I will say.

Do You Make New Year Resolutions?

I’m not one to make resolutions so you will not see any here but this is the month we try to get back to eating healthy again. With the Holidays we ate Fried Oysters, Shrimp and Grits, Fried Sauerkraut, and my very rich Black Eye Peas and delicious sweets as well. Here at Two Trails One Road we will be trying to make healthier choices. And there’s nothing wrong with that. Hopefully my Air Fryer will be used more often.

Egg Rolls Anyone?

We love them. Most Egg Rolls are deep fried. So to make them just a bit more healthy… I put them in the Air Fryer. They are easy and so very crunchy! My son showed me how to make these.

  • Sauté a bag of Cole slaw mix. I sometimes add shredded chicken or leftover shredded pork tenderloin.
  • Lay one egg roll wrap on a plate and add a few tablespoons of your sautéed cabbage mix.
  • Roll like Step 4 and 5
  • Brush tops with Vegetable Oil.
  • Spray the basket of your Air Fryer. Place the egg rolls in your Air Fryer.
  • Cook at 375 for about 6-8 minutes. It will depend on your Air Fryer for how long you cook them and how hot your air fryer should be. I have learned to play a little when making things in the Air Fryer.

Hope You give them a try. They are a perfect snack. And they really do come out crispy!

Lots of Rain and Chilly Temperatures

It’s Winter in the Desert. I only got two walks in this week. And no Desert Adventure because of a muddy Desert. I did see a few flowers while walking. They sure do enjoy the rain. I always look for these Paper Whites but not until February …so these were a surprise seeing them now in January.

My Project This Week

Sweet Man got me a Digital Picture Frame for Christmas. I had such a wonderful time choosing pictures for it. We have it setup in our kitchen and enjoy watching the pictures change. A perfect gift!

Here it is last evening. It scrolls through hundreds of pictures.

  1. Flowers are beautiful. I can imagine loving the digital frame along with the fryer because the egg rolls look delicious. Hope you have a fun book club discussion. I picked up six books at the library yesterday. Reading – it’s a good thing. 🙂

  2. Happy New Year, Nancy! Thanks for the recommendation of the Lost Apothecary. Have your read Mudlarking by Lara Maiklin (close but probably not right!). It’s fascinating — I became intrigued so I think I’d love this. I’m not for resolutions, either. My Christmas is up for awhile. We still haven’t done it with the kids yet — maybe in a week or two. And I need the light and cheer. I leave up the woodland tree until the equinox or close to it and some things like the bottlebrush forest. Santas will go away this week but snowfolk will come up. As you know from PA, winter is long in the north! I need the cheer! (Lovely photo of the champagne glasses!) Here’s to 2022. Where can we go but up. Or maybe I shouldn’t ask that question.

    1. Oh Jeanie I know all about those long, long cold winters! And keeping up some of the Christmas Cheer (maybe we should call it Winter Cheer now) is absolutely fine in my book.
      So you know about Mudlarking! I love it. I have to say we kind of do the same thing here in the desert. But perhaps we should call it sandlarking. But it’s actually called Rockhounding. 😃

  3. Happy January to you Nancy! I am lightening things up with our air fryer this month too! Our weather has been crazy, after a week of beautiful 75 degree weather we had 1/2 inch of snow and it’s 27 degrees this morning, perfect for reading a book by the fire~ I haven’t heard of Mudlarking, I am going to check out your book club selection.       I enjoy the air fryer and especially enjoy wings made in the air fryer!
      I’m going to experiment with more recipes with it.

  5. Good morning, Nancy! I always enjoy every visit with you. The book sounds interesting. I read 27 books last year, which fell beneath my goal. I should join a book club, sounds fascinating. I am taking down Christmas trees today. The egg rolls look wonderful, and yes back to healthier eating!

  6. Cheers to a Happy New Year Nancy! I’m hopeful 2022 will be an improvement over the past 2 years. Not only will the year be filled with continued house projects for me, but I’ll be knee deep in wedding planning with my daughter starting this weekend with dress shopping.

    As to New Year’s resolutions: for quite some time I’ve had only one, that is never to have a New Year’s resolution. 😉 That’s the ony one I can keep! 😉

  8. Happy New Year, Dear Nancy. My decorations are still up and won’t come down until tomorrow (Jan 6) and with our youngest daughter (who couldn’t come for Christmas) visiting in February, I might put the tree up again. There’s nothing wrong with Christmas Cheer any time of year.

  10. What a fun post. I love themed posts but also ones like this that include a bit of various things. Your flower photos are beautiful, as usual. The digital frame is such a thoughtful gift. I took my tree down today. I used to relish a live tree, but the advantage of an artificial tree is putting it up earlier and taking it down later. They are so beautiful; it is a shame not to enjoy them a little longer. Enjoy your book club meeting.

      I do a mix of themed posts and posts like these. Since I use my blog as a digital journal they become more “various.”
