Tuesday Tidbits #116 ~Lemon Pie

Hello Friends! It’s Citrus Season here in AZ. My lovely neighbor and friend up the street gave me some lemons that she had just picked. Along with her lemons she gave me her recipe for Lemon Pie! Thank you My friend!

I was very interested in this recipe as one whole entire lemon is used except the seeds!

🍋 Lemon Pie 🍋

1 Lemon cut into 8 pieces (remove seeds)

1 stick of soft butter

4 eggs

1 tsp. Vanilla

1 1/2 cups of sugar

Unbaked Pie Shell

Place cut pieces of lemon (peel and all) in a Vitamix Blender.

Add the butter, eggs, vanilla and sugar.

Blend until thoroughly mixed.

Pour into an unbaked pie shell and bake at 350 for about 40 minutes.

This is what mine looked like before I put it in the oven. I did not use a pie shell as we do not need the added calories. Trust me… it still came out great and so tasty!

Sweet Man added the new board at the top as the old board was straight across and this new board has a bit of a peak. I love how it came out!

  1. Hi There!!! 🙂 What an interesting recipe! I’ve never seen anything like it, where you just blend up the whole fruit!!! I’d love to give it a try. And i have a lemon tree that seems to always have fruit on it. Thanks for sharing.

  5. We’ve been picking oranges and grapefruit at my sister-in-laws house and her neighbor has a Meyers lemon tree that they encourage us to pick whenever we’re in the neighborhood. The lemon tart sounds delicious. Now if only I had a blender 😎

    1. Oh darn! I used a Meyer Lemon in this recipe… and it’s sooooo good!
      There is nothing like picking fresh oranges and grapefruit!

  6. I’m copying this one! Lemon is my favorite flavor and this looks delish. Glad to hear it works well without the pie shell, too. Hmmm. Might be on the menu this week or next!

  7. Great minds think alike! It is citrus season in California too and I have also just made a lemon pie. Mine however had crust and meringue, but no peel. I have not heard of using the peel before. It looked delicious!

  10. I have made a similar lemon pie, and it’s crazy how you use the whole lemon! So brilliant to bake it without the pie crust, I’ve got to try that! Your she shed looks so pretty all decked out for Valentine’s day, and it looks like you are going to have a red amaryllis bloom for Valentine’s Day too! AZ is the place to be this weekend, we are bracing for cold rainy weather, yuck!
