It feels like just a few minutes ago, it was Tuesday, and now we’re back here again on a brand new Tuesday. August is just a few days away?! How can that be? Summer is flying by!

It’s good having you here for this late edition of Tuesday Tidbits. Thanks so much for coming to see what we have been up to this past week. You may want to grab a cup of tea or coffee as we had a packed full week!

We’ve experienced a magnificent week of weather! It’s been nothing but excellent temperatures and endless sunshine. The lake has been showcasing its breathtaking beauty all week. The boat rides on the lake become truly exceptional when surrounded by nature’s beauty.

I spent some time in the kitchen this week. Contrary to popular opinion, it’s not all fun and games over here. 😄

Pesto

We have an abundance of Basil, so I made Pesto. Have you ever made it?

Pesto consists of Basil, garlic, pine nuts or walnuts (I used walnuts), shredded parmesan cheese, salt, pepper, and very good olive oil. I am not one to measure when I cook, so here is Mary’s post on how she makes delicious Pesto. I got about three small jars of pesto by using about 4 cups of basil. I froze two jars and will use one this week.

I like to spread it on toast with fresh tomatoes, add it to pasta, or make it a sauce for a Margherita pizza. (See how I make this summer pizza here using Puff Pastry.) I sometimes spread half the pizza with pesto and the other half with garlic butter. To change it up a bit.)

Corn Chowder with Ground Turkey

It’s that time of year when we have loads of delicious corn in the fridge. Along with lots of other fresh produce from the farm stands.

I often cook on the fly with whatever I have in the fridge. I shared a recipe for Turkey Corn Chowder here that you may want to check out. I made it again this last week but I made a few changes this time around. I did not cook the corn ahead of time. I took the corn off the cob and simmered the corn cobs in the soup for 30 minutes. Then discarded the cobs. They add exceptional flavor to the corn chowder.

I also let the potatoes thicken the soup and then added the corn and let it simmer for 15 minutes.

Because I let the potatoes thicken the soup, I didn’t make a roux with flour at the beginning.

Believe it or not, I didn’t have milk in the fridge, so I used unsweetened Almond Milk. The Almond Milk added a touch of sweetness. I would use the Almond Milk again! This chowder I made this week is a little bit more health-conscious. I browned very lean ground turkey in a separate pan and then added it to the chowder when it was done cooking. I like the added protein to the chowder. It was delicious!

Chicken Salad

I enjoy chicken salad and will make it from Rotisserie Chicken quite often. There are plenty of variations out there. Along with the usual mayo and celery, I will add a bit of poultry seasoning, diced green apples, pecans and dried cranberries.

I like having a chicken salad for my lunch throughout the week.

The addition of fresh peaches on the side was absolutely delightful!

Peach Crisp

I even made a Peach Crisp as we had company. I served it warm with ice cream, of course. A favorite summertime dessert!

Speaking of Company

We had our niece Rachel and her soulmate Gil come for a visit. It was wonderful to see them.

They were in town as they are touring the nation for Gil’s Nerve Tour Presentation. Gil Hedley in his own words has “combined interests and training that has supported his personal exploration of the human body and led him to develop an integral approach to the study of human anatomy. “Integral anatomy” looks beyond “regions.””

We went to his Five Hour Nerve Tour presentation in Erie, Pa. We learned about and saw every nerve in the body! It was fascinating! Many in the audience are Physical Therapists, nurses, Physician Assistants, Chiropractors, Pilates Instructors, and Yoga Instructors. Learn more about Gil and his work here.

Our Flower Gardens

Our gardens continue to thrive, and this week marked the blooming of the last lily. These double lilies serve as a beautiful reminder of my dear Mom. They were her favorites and have been growing in the yard for 50+ years.

  3. Your photos are lovely Nancy…almost as lovely as your sweet grand. Your smile shows how proud you are and rightly so…Sweet man looks content behind the wheel and in the chair with your grand. Peaches scream summer and your chicken salad and peach dessert look so yummy. Enjoy your summer by the lake and I hope you are able to sit and relax and enjoy the Olympics (if that is your thing). I LOVE SPORTS of any kind so I am staying cool by staying inside and watching the tube. Normally, I am the first one outside and the last to go inside.

  4. First of all, congratulations on that new grandchild! I know you’re loving it. Secondly, everything looks so beautiful and green. Lol. I’m so envious of the farmers market and produce because we really don’t have anything like that here, especially corn. I have made pesto before and once we get moved, I plan to plant basil again so that I can make more. Sometimes I just buy it from Trader Joe’s, but I like having it in my own garden. Of course here, I can’t grow it in the summer. We’ve also had lots of clear skies and sunshine. Ha, ha. We have gotten a bit of rain but could use more. Makes me nostalgic to see the Cleveland sign and the city skyline.

    Greatly enjoyed the post and happy to know you’re having a great summer.

    1. Oh, Janet, I know that nostalgic feeling. I do have to say Cleveland has a beautiful skyline. My son and daughter-in-law had the CLE skyline on their wedding cake!

I love your tip about using the corn cobs to flavor your soup, I’ve got to try that~ I admire you for making a big batch of pesto~ I have made pesto and it’s so easy, but these days I’ve gotten lazy and just buy it 😂 I know you were thrilled to meet your new grandbaby, congrats!

  12. What a rich, wonderful post, Nancy! Oh my — it’s beautiful at the lake, isn’t it? And I’m crushing (again) on your cheerful kitchen. What wonderful treats you’ve pulled from it. I’m a basil/pesto person too and the pastry pizza is one I’m saving. Great idea about the corncobs in the chowder stock. What a wonderful depth of flavor that would add. The flowers rock, and so fun to have both fun company and a very special and happy road trip. Cleveland is always great but when the reason to visit is to meet your baby grandson, that’s beyond wonderful. Congratulations!

  13. We live just west of Cleveland and I have seen just about everything there EXCEPT the Cleveland sign! But who cares about that when you have a beautiful grandson to cuddle!!!
