Country Drives

We love going antiquing, and it often leads us on delightful country drives.

We never know what we are going to see or find when we start out on our adventure.

Driving along our path and soaking in the lovely country charm is such a beautiful experience.

There are plenty of Amish Farms in our area, which are a pleasure to see.

I think I might be partial to red barns!

But what we really love is finding a roadside market! This one was on an honor system.

Down the road a little we found corn! We saw a lot in tassel!

Do you see the corn tassels from a car going 50 miles an hour? 😄

Of course, we brought all that summer goodness home!

Country Cooking

All this summer goodness was made into several different meals. One meal I made is a popular social media no-cook sauce pasta. It’s a delicious pasta dish with fresh tomatoes and basil. My basil is unbelievably lush this year and continues to provide.

In a large bowl, I diced fresh tomatoes, sundried tomatoes, and roasted red peppers, mixed in a generous amount of basil and garlic powder, then drizzled lots of olive oil over the mixture. This mixture sat for an hour on the counter to marinate.

I added some cooked hot pasta to my big bowl of tomatoes, peppers, and basil and mixed everything together. I drizzled on more olive oil, added salt and pepper to taste, and sprinkled on Parmesan cheese. It turned out to be such a delicious farm-to-table dish! There are many variations of this recipe on Instagram/Pinterest.

For dessert, we had fresh peaches and cream with a bit of honey, a sprinkle of walnuts, and blueberries.

Country Blessings

Living by a beautiful lake in the countryside brings us many wonderful blessings, and we feel grateful for them daily!

  1. It’s certainly a beautiful day in your neighborhood from fresh veggies to beautiful barns and lake photos. That’s a very unique roadside stand, and I like it a lot. Hope those fresh dishes tasted as good as they look. Your lake sure looks inviting especially since we are going over 100 with wicked humidity today. Enjoy your water access. 🙂

    1. Oh, Judy, stay cool, my friend. 100 and humidity is terrible. We had 90 degrees and humidity yesterday. Nothing can be done outside.

  2. Your holiday continues with much summer joy. And, a reminder to me to stop by my favorite sweet corn place to see if they have started selling yet. It should be pretty close to ready! That tomato/basil/pasta dish looks just marvelous! With beautiful bird sightings, lovely tables and tranquil visits to Amish country, what could be better?

  3. Nancy, your certainly have embraced the joys of country living. I love your images of the farms and red barns. There’s nothing better than summer produce from a farm stand. We recently brought home 50 ears of sweet silver queen corn straight from a Georgia farm! I didn’t even think to take a photo! Stay cool!

  6. Nancy, I love this post!!! Country living is my preferred lifestyle! We went to the Pennsylvania Amish country when our son was two years old. We loved it and red barns are my favorite. We have enjoyed fresh corn and fresh blueberries almost daily. The pasta dish looks delicious. Your country kitchen is charming, and I am sure many fabulous meals come from that kitchen! Wow, the cottage garden is producing beautiful blooms. The closing photos of your special country living at the lake are stunning, my friend! Enjoy!

  10. Thank you Nancy for taking us on a virtual ride through Amish Country. We do have Amish and Mennonite communities here in Florida. Pinecraft near Sarasota is well known for Amish furniture, restaurants and roadside stands. You rarely see horse and buggy but you do see an occasional wagon with draft horses. More common are bicycles….3 wheelers for many of the older residents but the younger ones definitely two wheelers. And yes the men wear straw hats and the women cover the hair with handmade bonnets. Lovely! You are so fortunate to live by your beautiful lake and your photos are simply beautiful. thanks for sharing…your cozy kitchen is perfect. Hugs

  12. What a lovely summer post Nancy! The drive in amish country was interesting. The fresh produce looks so yummy. I tried growing corn this year, but it proved ot be rather difficult in Sweden, June was too cold. It might have worked better last year when it was warmer. Fresh corn on the cob is so delicious, your photo made my mouth water. Thanks for a great post!

  13. So much to love in one post, dear Nancy Lou! Sharing about your drives reminded me of my dad’s favorite Sunday activity…taking a drive to “blow the stink off” and invariably we’d find our way to a roadside fruit and veggie stand. Good memories! And I chuckled about the “time bombs”. Yes, yes indeed. I would’ve purchased them…but might’ve regretted it later!

  14. When we lived in Ohio, we would take our kids camping at Mohican State Park which was near Amish country. We loved driving through there and enjoying an Amish meal. Your photos of your beautiful life are amazing! The tomato pasta dish looks so tasty as does your peachy dessert.

  16. Good morning, Nancy! Your country kitchen is absolutely beautiful and looks like such a happy place to prepare meals. I think one of the best things about summer is the fresh veggies and peaches. Your pasta dish sounds scrumptious. It was interesting to see the Amish cutting hay. In our area, the Amish drive tractors for farming and even drive them for transportation to the grocery stores and banks. It scares me to see them on busy highways. There was even one family who had a phone booth on their farm. I’m sorry I am late commenting. I have been away from my computer. I hope you have a wonderful weekend, sweet friend!
